Comparative drying: 3 environments, 1 lot

Lot 12 — Natural Aerobic Fermented · Sunrise Orange · 320kg split into Raised Bed, Ground Patio and Dry Room

Lot 12 was designed as a comparative experiment: after aerobic fermentation with Sunrise Orange yeast for 4 days (pH 5.3 → 4.3), we depulped and split the coffee into 3 equal parts, each drying in a different environment. The goal: document how the drying method impacts moisture, Aw, density and bean temperature over time.

pH Curve — Aerobic Fermentation

Drop from 5.3 → 4.3 in 4 days submerged

Moisture Curve — 3 Environments Comparison

Dry Room dries 3x faster than outdoor beds. Ground patio retains moisture longer.

Water Activity (Aw) — 3 Environments Comparison

Dry Room reached safe Aw (<0.65) in 6 days. Outdoor beds oscillated for over 13 days.

Safe < 0.60 Attention 0.60-0.65 Risk > 0.65

Density — 3 Environments Comparison

All started with high density (~720 g/L). Dry Room lost density faster.

Bean Temperature — Comparison

Dry Room maintained stable temperature (~20°C). Ground patio reached 34°C.

Preliminary Conclusions

1

Dry Room dried coffee in 9 days vs 14-16+ days on outdoor beds — almost 2x faster.

2

Bean temperature in Dry Room stayed stable between 19-22°C, while ground patio reached 34°C — risk of cell damage.

3

Aw in Dry Room reached 0.523 (safe zone) in 6 days. Outdoor beds oscillated between 0.7-1.0 for over 10 days.

4

Density dropped faster in Dry Room (722 → 340 g/L), possibly due to more uniform drying.

5

Ground patio retained moisture longer and showed dangerous temperatures — higher microbiological risk.

6

Next step: comparative cupping of all 3 samples to evaluate sensory impact of each method.

Status: Resting

Final weight: 24.200kg. Awaiting stabilization for new Aw measurement and comparative cupping.
